ZESTY VIETNAMESE CHICKEN SALAD
SERVES 4
INGREDIENTS
½ a rotisserie chicken shredded
4 cups greed cabbage finely shredded
2 carrots finely shredded
1 bell pepper finely sliced
¼ cup cilantro
¼ cup mint
½ cucumber sliced
1/6 cup roasted peanuts
1/6 cup crispy shallots
½ cup scallions
DRESSING
2 tbls white sugar
2 tbls fish sauce
2 tbls lime juice,
1 ½ tbls white vinegar
1 tbls water
1 birds eye chilli minced
1 small garlic clove minced
2 tbls olive oil
A few limes sliced into wedges for garnish
METHOD
For the dressing mix all ingredients together in a bowl and let stand for 5 minutes. Meanwhile for the salad fold all ingredients together in a large bowl reserving ½ the peanuts and crispy shallots, incorporate with the dressing and serve with the remaining peanuts and shallots.
