Goat Cheese Crostini with Pomegranate and Pistachios

Ingredients 

1 Organic French Baguette

1 tbsp. Olive Oil

Salt & Pepper, to taste

1/2 cup Creamy Goat Cheese

1/3 cup pomegranate arils

1/2 oz. chopped pistachios 

Hot honey, for drizzle

Optional garnish: Fresh Thyme 

 Instructions 

Preheat oven to 400ºF. Slice baguette into slices about 1/2 inch thick. Brush with olive oil, sprinkle with salt & pepper, and place on a baking sheet. Bake until light golden brown, 8-10 minutes. 

Top each slice with goat cheese; about 1 teaspoon per slice. Sprinkle with pomegranate and pistachios.  Drizzle with honey.
